From now on, we'll be serving you a crispy yet tender menu featuring the St. Martin's goose – perfect for a cozy evening at the castle.
We offer a whole goose for groups of 5 or more people. Only with a reservation made in advance.
Chestnut soup with walnut oil, croutons, and pea shoots
Huître Dorée: Gillardeau No. 4 oysters fried in goose fat, chives, and smoked Maldon salt
Hand-carved Allgäu Fleckvieh beef tartare, spicy: yuzumayo, mustard seeds, and pickled pumpkin pearls
Two Oldenburg goose breast and leg: Pommes Dauphine, carrot ribbons, celery puree, and orange jus
Goose Noire: Homemade tagliatelle tossed in goose jus, giblets, spring onions, and market vegetables
